- Finishing Spice (Best Method): Add the masala during the final 2–3 minutes of cooking or sprinkle it over the dish just before serving. Adding it too early or overcooking it can cause the volatile oils to evaporate, resulting in a loss of aroma and a potentially bitter taste.
