Recipes

JMG Paneer Gravy Masala is a concentrated spice blend designed to create various restaurant-style North Indian paneer dishes, such as Paneer Butter Masala, Shahi Paneer, or Paneer Tikka Masala.1. Basic Cooking Steps (Standard Gravy)To prepare a standard 250g portion of paneer, follow these 2026 recipe guidelines:

  • Step 1: Sauté Aromatics. Heat 2 tablespoons of oil or butter in a pan. Sauté finely chopped onions and 1 teaspoon of ginger-garlic paste until golden brown.
  • Step 2: Add Tomato Base. Pour in 1 cup of tomato puree (or 2–3 chopped tomatoes) and cook until the oil starts to separate from the masala.
  • Step 3: Integrate the Masala. Add 1–1.5 tablespoons of JMG Paneer Gravy Masala. You can also add a pinch of turmeric or red chili powder if you prefer extra heat. Cook for 1–2 minutes to allow the spices to release their aroma.
  • Step 4: Simmer with Paneer. Add 250g of paneer cubes and enough water (about ½ to 1 cup) to reach your desired consistency. Simmer on low heat for 5–7 minutes.
  • Step 5: Finish. Stir in 2 tablespoons of fresh cream or a dollop of butter for a rich finish. Garnish with freshly chopped coriander and crushed kasuri methi (dried fenugreek leaves).

2. Using it for Specialized Dishes

  • Paneer Butter Masala: Follow the steps above but use butter instead of oil and add a cashew paste (blended cashews and water) to the tomato puree for a creamier texture.
  • Paneer Tikka Masala: Use the masala as part of a marinade (mixed with yogurt) for the paneer cubes before grilling them, then add the grilled cubes to the prepared gravy.
  • Matar Paneer: Simply add boiled green peas along with the paneer in Step 4.

3. Pro Tips for 2026

  • Softening Paneer: Soak your paneer cubes in warm salted water for 10–15 minutes before adding them to the gravy to ensure they stay soft.
  • Consistency Fix: If the gravy is too thin, simmer it uncovered for a few extra minutes; if it is too sour, add ½ teaspoon of sugar or honey to balance the acidity.
  • Storage: Keep the JMG masala in an airtight container in a cool, dry place to maintain its potency for up to 6 months.
