Star Anise, Cloves, Black Pepper, Cinnamon Sticks, Dry Ginger Powder, Red Chilly, Black Cumin Seeds, Coriander Powder, Turmeric, Black Cardamom, Green Cardamom, Fennel Seeds, Garlic Powder, Onion Powder.
Recipes
1. Chicken Biryani Recipe:-
NOTE :- (You can use the JMG BIRYANI MASALA IN VEG BIRYANI ALSO.)
This method uses JMG Biryani Masala to marinate and cook the chicken for a deep, layered flavor.
Ingredients:
1 kg Chicken pieces
3 cups Basmati Rice (soaked for 30 minutes)
2 tsp JMG Biryani Masala
1 cup Yogurt
2 tbsp Ginger-Garlic paste
Fried onions (birista), fresh mint, and coriander
Whole spices for rice: bay leaf, cinnamon, cardamom
Instructions:
Marination: Mix chicken with yogurt, ginger-garlic paste, and 1 tsp of JMG Biryani Masala. Let it rest for at least 30 minutes.
Prepare the Chicken: Sauté onions until golden, add the marinated chicken, and cook until the oil separates. Add the remaining 1 tsp of masala during this stage to enhance the aroma.
Boil Rice: Cook rice in water with whole spices until it is 70-80% done (still has a "bite").
Dum Layering: In a heavy-bottomed pot, layer the chicken gravy, then the partially cooked rice. Top with fried onions, mint, and coriander.
Final Steam: Cover tightly and cook on very low heat (Dum) for 15–20 minutes.
2. Vegetable Biryani RecipeA great option for a vegetarian version using a medley of seasonal vegetables.Ingredients:
500g Mixed Vegetables (potatoes, carrots, beans, cauliflower)
1.5 cups Basmati Rice
1.5 tsp JMG Biryani Masala
0.5 cup Yogurt
Ghee, whole spices, and fried onions
Instructions:
Vegetable Base: Heat ghee, add whole spices, and sauté sliced onions until brown.
Spice Infusion: Add ginger-garlic paste and the mixed vegetables. Stir in the JMG Biryani Masala and yogurt. Cook until vegetables are 80% tender.
Layering: Spread the cooked vegetable mixture at the bottom of the pot and layer par-boiled rice on top.
Steam: Seal the lid with foil or dough and cook on low heat for 15 minutes.
Tips for Best Results
Aroma: For extra fragrance, add a few drops of Kewra essence or saffron-infused milk over the rice layers before the final steaming.
Storage: Keep your JMG Biryani Masala in an airtight glass jar in a cool, dry place to maintain its potency for 6-8 months.
Balance: If the masala is very spicy, balance it by increasing the amount of yogurt in your marination.
